My inbox has been crammed with requests for the recipe to Kelly's protein pancakes so I thought I would share. Oh wait, it was just one person who was curious. I will post it anyway because Kelly makes double batches and freezes them. Thirty seconds in the microwave and I have a quick, easy, and healthy breakfast for Cason.
1 cup cottage cheese
1 cup greek 0% yogurt (look for Fage, Oikos, or similar brand)
1 cup whole wheat flour
3 eggs
juice of 1 lemon (appx 2 Tablespoons)
1/2 tsp baking soda
pinch of salt
Beat together the cottage cheese, yogurt, eggs, and lemon juice. Mix the baking soda, flour, and salt. Stir the flour mixture into the dairy and mix just enough to blend.
Heat a skillet over medium-low heat. Coat with nonstick spray and add batter in 1/4 cup servings. Flip when the top begins to bubble and cook the second side until browned, I'm sure you know how to do this part.
We let them cool, then put a piece of wax paper in between the pancakes before throwing them in the freezer. Enjoy!
